2 Acorn squash
1 Package Italian sausages
1 Can Fire roasted tomatoes
2 Onions- diced
1 Bell pepper-diced
Cook squash- Cut in half and clean out seeds. Place cut side down in a glass dish with 1/4 cup water. Cover and cook on high for 10 min.
Oil in pan. Cook sausages and cut up. Add onions and pepper and sausage back to pan, cook on low 10 min.
Add can of tomatoes. Heat through
Fill acorn squash with sausage mixture and enjoy!
